DR Recommends: Hadley’s Perfect Peach Salad

In this episode of Dead Reckoning Radio, we covered a new edition of DR Recommends. In that edition Hadley offered up an excellent and mouth-watering recipe for a peach salad and we wanted to share it with you.


Hadley’s Perfect Peach Salad



2 big ol’ peaches, best from South Carolina or Georgia

½ red onion

1 tablespoon olive oil

3 oz crumbled goat cheese

3 oz glazed walnut pieces, buy them in a pouch or make your own

¼ cup balsamic vinegar

2 tablespoons brown sugar

5 oz arugula

  1. Cut up peaches into wedges and chop red onion. Heat up some olive oil in a pan on your stove top, sauté peaches and red onion together. The aroma may cause salivation.
  2. In separate pan, heat up balsamic vinegar and brown sugar to make a reduction. It’s ready when it sticks to the back of a spoon like syrup.
  3. Mix arugula, peaches, onion, goat cheese, walnut pieces together. Toss with balsamic reduction.
  4. Enjoy with a glass of homemade sangria… you can put extra peach cubes in there!
